Chocolate and Lime

Hello all! It has been a while since I’ve posted any recipes on here and I have a couple coming up in addition to this one! I’ve finally had a little bit more time to bake and it has been very exciting.

Chocolate and Lime - Lefty Living Life

I am really excited about this recipe because it is one completely of my own making. The idea is mine and then I found recipes for all of the component parks and tweaked them until they were perfect.

It is basically just a chocolate cupcake that I cored, filled with lime curd and then topped with chocolate ganache. It is an expected combination, but is surprisingly delicious. If you do make these, please send me your feedback. I would love to hear what you think!

Ingredients: 

Cupcakes:

1 1/2 cup flour

1 cup sugar

1/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup water

1/4 cup oil

1 tablespoon white vinegar

1 teaspoon vanilla

 

Lime Curd:

4 limes

1 1/2 cup sugar

1/4 pound unsalted room temperature butter

4 eggs at room temperature

1/8 teaspoon salt

 

Chocolate Ganache:

16 oz. bittersweet chocolate

 2 cups heavy cream

 

Directions: 

Whisk together flour, sugar, cocoa, baking soda, and salt in a large bowl. Make a well in the center of the flour mixture.

Blend water, oil, vinegar, and vanilla and pour into the well of the dry ingredients. Whisk until smooth and spoon into muffin tins with liners. Fill about 2/3 of the way full.

Bake at 350 for 15-20 minutes until the toothpick comes out clean. Cool completely and then scoop out the middle with an ice cream scoop.

Squeeze the limes to make 1/2 cup of juice. Cream the butter with the sugar. Add the eggs one at a time and then add the lime juice and salt. Mix until combined.

Pour the mixture into a saucepan and cook over low heat, stirring constantly, until thickened.

Once the curd is thick and not too hot, fill the center of the cupcakes until the curd reaches the top of the cupcake. Cool completely.

For the ganache, heat the heavy cream in the microwave for 3 to 4 minutes until just begins to simmer. Pour the cream over the chocolate and let stand for 2 minutes. Mix to combine completely.

Cover the top of the cooled cupcakes with ganache and then cool before serving. Makes 12-18.
