I am starting to realize that there is no set age or point in your life when you become an adult. It is much more of a gradual process. As much as I wish that I could flip a magical switch and understand taxes and health insurance and have my act together, that’s just not how it works.

But, I am slowly getting closer. I was thinking about this with my post last week about making friends as an adult, but today, it’s official. Starting today, every week I’m going to have a post about things I am figuring out or things that I am struggling with as an adult.

This week, our topic is meal prep. With all of my stomach issues over the last few years, I am terrible at meal prepping for lunches, planning out meals in advance, and eating more than pasta at home. But, I’m finally getting it together!

And two things are really helping me out. First of all, Trader Joe’s. They are SO MUCH CHEAPER than every other grocery store! I never spend more than $4 on any one item, which is insane. Plus everything is delicious, the produce is super fresh, and it’s my new obsession. (I wish they were sponsoring this, but they aren’t and this is actually my honest opinion. Ask my friends, I’m obsessed).

The second thing is food blogs. Obviously I get lots of ideas from my mom’s blog, but being the blog enthusiasts that I am, I also follow a lot of other food blogs. Currently I am obsessed with Half Baked Harvest. Everything she makes looks so good (this watermelon salad recipe is from her and it’s AMAZING) and it is perfect because almost everything makes multiple servings.

I only made half the recipe for this watermelon greek salad, but it was still three full lunches for me. So my lesson this week is find a grocery store you love, find some recipes you are excited about and then when you cook or assemble, make enough to serve multiple meals.
