Strawberry Chocolate Tarts - Lefty Living Life

With my current diet limitations, baking has become very difficult. But I finally figured out the perfect recipe for strawberry chocolate tarts. With dark chocolate, they are sweet, but not sicky sweet and because they are tarts and not a whole pie, they were perfect for my birthday part or for a small after-dinner dessert.

Ingredients: 

1 stick room temperature butter

3 oz. room temperature cream cheese

1 cup flour

1 lb strawberries cut into small pieces

1/4 cup sugar

1/2 tablespoon cornstarch

1 cup chocolate chips

Directions:

Crust:

Blend cream cheese and butter until smooth. Add flour a little at a time until fully incorporated. Refrigerate.

Make into 9 balls for a regular muffin pan or 24 for a small muffin pan.

Press into muffin pan and spread up the sides of the pan.

Filling:

Combine sliced strawberries, sugar, and corn starch. Mix gently until strawberries are coated in dry ingredients.

Add chocolate chips and mix until combined.

Spoon equal amounts into each muffin pan.

Bake at 350 for 15-25 minutes or until edge of crust starts to show color.
